Paneer Puliodarai

Today I am pleased as punch and grinning from ear to ear – ask why? Plz! K k fine I’ll tell you – My sweetest niece left a comment on my Pad Thai recipe –Here it is –

Hi Priyu Chitti! Guess what I made (with TONS of help from Paati of course)- pad thai and green curry. Guess where I got the recipe? Off the most fantastic vegetarian cooking blog! This recipe that I am posting today I am dedicating to all the children in my life, starting from the oldest nephew to my very own littlest one – This is a recipe that is surefire winner y’all
 If you have instant puli-kachal mix then this is a no brainer, This is how I did it but I will be posting a pulikachal recipe soon so that if you want to do this from scratch that will be an option too.
Without further meandering, here is the recipe
With Premade Pulikachal mix
Paneer Puliodarai
Ingredients
3-4 tbsp of Pulikachal mix
1 block of paneer as sold in Indian stores
½ red onion sliced for garnishing (not for the traditionalist who may consider this blasphemy)
2 fresh green chilies slit
1. 5 cups of Basmati Rice cooked fluffy
1 tbsp tsp of sesame oil
½ tsp of turmeric powder
½ tsp of curry powder
½ tsp of salt

Preparation
Allow the cooked rice to cool a bit – mixing when it is piping hot will result in a mushy mix
In the meantime, heat a pan with 1 tsp of oil – throw the the curry powder and turmeric, paneer and slit green chilies
Wait until paneere starts turning golden.
Now add the pulikachal mix and mix in the two so the flavors mingle
Sauté the onions with the rest of the oil (2 tsp) and keep
In a large bowl, add the rice and a bit of the mix and turn with a fork – that is your instrument if you want to keep the rice separate!
When all the rice is well mixed, add the sautéed onions on top
Pls note – Onions are STRICTLY optional
Enjoy with chips or with a sizzling bitter gourd stir-fry like we did J
